I doubled this recipe and used 30 by 24 cm TrayMETHOD½ cup quick-cooking oatmeal ¾ cups boiling water½ cup sugar½ cup brown sugar1 & ½ cups flour ½ teaspoon salt2 teaspoon Baking powder1 teaspoon baking soda2 EggsVanilla Essence½ cup of shorteningMix the oatmeal with the boiling water, stir and cover. Mix the remaining ingredients then stir in the oatmeal mixture. Grease and flour an 8×8 inch pan. Pour batter into pan and bake at 350 for 23-25 minutes.SPREAD FROSTING OVER WARM CAKE
How to Make Coconut-Pecan Frosting:Ingredients:6 tablespoon melted butter⅓ cup brown sugar1 cup sweetened shredded coconut1 egg beaten ½ cup chopped Pecan nutsLess than ⅓ cup milk (one third) 1 teaspoon vanilla
Combine all ingredients and mix thoroughly. Carefully spread the slightly wettish frosting over the top of the cake.Turn oven in high and broil at 220 on middle rack until coconut is just brown.on high +- 5 minutes or More.. But Watch very closely You may place under grill after if still not Golden in colour– it doesn’t take long. Cool, slice, and serve. Enjoy.
