INGREDIENTS
1kg leg muttonCut into pieces2 tablespoons red chilli ginger garlic1 ½ tablespoons whole jeera¾ cup ghee (Clarified butter)1 large onion sliced2 medium tomatoe liquidised3 tablespoons tomatoe puree¾ cup full cream plain yogurt2 teaspoon cumin and coriander powder 1 teaspoon kashmiri chilli powder½ teaspoon turmeric 1 ½ teaspoon gharam masala ½ teaspoon ground black pepperSalt to taste2 tablespoons white viniger or lemon juicePinch of saffron soaked in a cup of hot waterFreshly chopped coriander
METHOD
Marinade leg mutton pieces in the red chillie ginger garlic masala,overnight.Roast the whole cumin seeds,add in the ghee (Clarified butter).Add in the onions and braise untill golden brown.Add in the mutton pieces and the saffron water, and viniger Cook for about 15 minutes on low heat.Add in all the spices and braise Add in the tomatoes and tomatoe pureeCook for another 15 minutes.Add in the yogurt.Cover and simmer untill the meat is soft and tenderTip(Add more water,as you cooking so a the mutton can become soft and tender simmer on a low heat )Garnish with freshly chopped coriander
