INGREDIENTS
500 ml fresh cream 1 tin Treat caramel 2 packets of tennis biscuits 1 large slab of mint crisp 1 sprig mint for garnish
METHOD
In a bowl, beat the fresh cream until they form soft peaks. Gently fold in the caramel and mix until combined. Next layer the base of a rectangular or square dish with tennis biscuits, then add the caramel / cream mixture and grated peppermint chocolate. Then do the next layer same way ending off with a final layer of caramel/ cream and more chocolate. Add a mint leaf for garnish if you like Refrigerate for 6 hours or even overnight
