Easy Chicken Curry For Beginners

INGREDIENTS

1 chicken cut & washed 2-3 sliced onions¼ cup ghee (Clarified butter)1 tablespoon oil1 heaped teaspoon arad (Turmeric)2 whole Elachi (cardomom) (optional)Taj, lavang, whole black peppers & whole jeeru (cumin) (optional)1 heaped teaspoon red chilli powder1 tablespoon red ginger garlic masala (I substitute this with Amina’s wonderspice tikka marinade)1 heaped teaspoon salt1 teaspoon jeeru (cumin) powder½ teaspoon dhana powder2 large tomatoes liquidised with 1 tablespoon tomato purée (or the equivalent in tinned tomato/passatta)4 potatoes (peeled & cut)¼ cup chopped coriander Few whole red & green jalapeños/ chilli’s (optional)

METHOD

1.) Braise onions + whole spices in oil & 3 tablespoons ghee (Clarified butter). Add Aminas wonder spice and fry until golden brown.2.) Add tomato with the powdered spices - mix & fry on medium heat, add chopped coriander, mix again and cook on low heat for 10-15 minutes or until the oil comes to the top. Then add the chicken and cook on medium heat for approx 15mins. 3.) Give it a gentle mix, add the potatoes, fry on medium heat for approx 5mins then add +- 2 cups of boiling water & chillis/ jalapeños and cook on high heat for approx 15mins until chicken is tender, potatoes are soft & gravy is thick.Serve with steamed white rice, atchaar, papad and/or roti.
