Original Recipe: Good cooks for beginners by Misses Wadee 2nd edition, 2003
INGREDIENTS
1 small finely sliced onion2 tablespoons salt2 tablespoons ghee (Clarified butter)1 teaspoon oil1 cups basmati rice 1 small grated carrot¼ cup frozen peas5-7 cups water
METHOD
1.) Add rice to boiled water mixed with 1 teaspoon salt & a pinch of oil. Boil for approx 7 minutes then add the peas. Test rice after a while, (the kernels still need to be a little hard), drain into a colander then mix grated carrots into the drained rice.2.) Place 1 cup of water with 1 teaspoon oil at the bottom of the pot, add the drained rice and steam on low heat until rice is soft.3.) Fry onions in ghee (Clarified butter) until golden brown & put this over the steamed rice (this vagaar is optional - I don’t add it because of the veg in the rice). Serve with chicken curry, carrot atchaar & papad.
