INGREDIENTS
½ butternut cut in cubed1 medium onion3 tomatoes grated1/2 teaspoon mustard seed2 pieces cinnamon stick1 or 2 dried chillies broken into 3½ teaspoon turmeric2 teaspoon chillie powder¼ teaspoon ginger garlic masala1 teaspoon ginger garlic ground1/4 teaspoon dhania (coriander) jeera powderFew sprigs curry leave3 green chillies cut into 4¼ cup oil1 can tin fish in tomato - seperate fish from sauceSalt to taste
METHOD
Add oil and seeds in pot with onion Braise till brownAdd butternut to fry in oil for 5 minutesAdd water to let butternut to boil for another 5 minutesIn the grated tomatoes add the fish sauce together with curry leaves and spices not forgetting salt to tasteAdd this to the butternut and add 1 cup hot water and cook for 10 to 15 minutesButternut will start softening then add fishLet cook for 5 minutesAdd dhania (coriander)Serve with rice or roti
