INGREDIENTS
Fig Crumble

Crust 2 cups flour6oz butter⅓ cup sugar1 tablespoon rolled oatsPinch of saltIce water
Filling:4 cups chopped figs¼ cup sugar2 tablespoon of cornstartch 1 tablespoon lemon juiceMix all leave aside.
METHOD
Combine the flour, salt and butter in a bowl mix until looks like breadcrumbs.
Take 1½ cup of the crumble mixture into another bowl.
To the remaining ½ cup of flour drizzle ice water little at a time until the dough starts to come together. Leave in fridge for 1 hour.
To the 1½ cup mixture add sugar, oats, chopped nuts of your choice. Mix.
Roll the dough place in a 8" or 9" baking pan.Spread the fig mixture evenly.Add the crumble mixture over, use a fork to even it out.
Bake in pre heated oven 190C/170 fan/gas 5 for 45 minutes to 1 hour or until crisp and nicely brown.
Leave to cool before serving
