1 lb ripe figs, peeled and quatered2 tablespoon light brown sugar 1 tablespoon lemon juice 1 (14-oz) can condensed milk1 pint whipping cream1 teaspoon vanillaextract
METHOD
1. Combine the figs, sugar & lemon juice in a saucepan. Stir to dissolve the sugar. Bring to a simmer & cook about 10 minutes to soften the fruit. Mash it up a bit with a potato masher.
2. Transfer the fruit to a large bowl & whisk in vanilla essence. Let cool, then whisk in the condensed milk.
3. Another bowl Whip the cream to stiff peaks.
4. Lightly, gently fold the whipped cream into the fig mixture.
5. Scrape the mixture into a container, cover, and freeze until solid. To serve, let the ice cream sit out for a few minutes to soften before scooping.
