INGREDIENTS
12 Papo Secos (Portuguese rolls)6 chicken fillets sliced to form pattiesMarinate with4 large garlic cloves thinly sliced1 lemon2 teaspoons roasted paprika1 teaspoon cumin½ teaspoons turmeric1 tablespoon of salt3 tablespoons of olive oil4 bayleaves
SauceLeft over juice/garlic of marinade80g butter2 bayleaves1 teaspoon paprika2 heaped teaspoons of cornflour mixed with 1 cup of waterAnother cup of water
METHOD

Cut 6 fillets in half and flatten ro make 12.Marinate with garlic, juice of 1 lemon, paprika, cumin, turmeric, salt & olive oil. Mix it up by hand. Leave overnight or standing for 1 hour. Heat a frying pan and add 3 fillets at a time & cook in its own juices until it dries out turning occasionally.Remove once juices are dried out and chicken is sizzling.Set aside in a bowl add another 3 fillets until all the chicken fillets are done.
Sauce.Melt butter in the same frying pan. Add 2 bayleavesAdd the left over juice and garlic.Fry until garlic browns then add 1 teaspoon paprika.Add cornflour mixture stir and add in another cup of water stir until mixture thickens.Add chicken fillets to sauce coating evenly. Switch off stove and allow to rest for 10 minutes.
Serve in a Portuguese roll with a sunnyside up fried egg. I added lettuce for the crunch.
Serve with a side of chips.Alhamdulillah all done.
INFO & TIPS
Pregos are traditionally made with pepper my family prefers paprika. Bottled lemon juice can be used about 3 tablespoons. Be generous with the garlic 😄
