Any vegetable of choice can be used
1 cauliflower 1 Butternut 1 Sweet potato 3 Potatoes 3 carrotsSliced green beans
Marinate veggies for a little while with the following
1 teaspoon Salt 2 teaspoon chilli powder Quarter teaspoon arad (Turmeric) 1 teaspoon ginger garlic Half teaspoon garlic Black pepper 2 teaspoon dhana Jeeru (Cumin) Half a cup of yogurt or sourmilk Half a cup of fried onions 3 small tomatoes liquidized
Heat ghee (Clarified butter) in a pot, add 1 teaspoon of Jeeru (Cumin), whole red chillies, piece of cinnamon,few elaichi pods and curry leaves..Braise until aromatic, add marinated veggies and cook on low until done, adding water when necessary .
Serve with roti or naan.
