Dough for Mini Burgers/Buns/subsRecipe Credit Ramadhaan DelightsWith a few amendmentsBy Hajira Farook @hrns_cuisine 4 cups cake Flour1 packet (10g) instant yeast 1 teaspoon salt2 tablespoon sugar ½ cup oil1 cup milk 1 cup water Chicken filling for mini burgersBy Hajira Farook @hrns_cuisine 500g Chicken Fillet cut in small cubes or thin slicedBlob of butter2 tablespoon Olive oil1 heaped teaspoon Robertson chicken spice1 teaspoon garlic2 tablespoon lemon juice1 teaspoon red masala1 tablespoon tomato purée Salt to taste1 teaspoon Black Pepper 1 teaspoon PaprikaA good sprinkling of Inna Paarman green onion, garlic pepper, Cajun & chicken spice 2 tablespoons mayonnaise 2 tablespoon Nandos Bushveld braai (bbq)1 tablespoon mustard sauce
Combine the dry ingredients and oil together in a dish. Heat the milk and water together until lukewarm, add just enough liquid to the dry ingredients to form a soft dough.Allow to rise till double in volume. Punch down and form into small rolls.Place onto greased oven trays and brush with beaten egg and a sprinkle of sesame seeds. Bake in moderate oven till pale brown. Remove from oven and cool. Slice the bun butter both sides and spread with perinaise, chicken filling and a piece of lettuce. In a pan melt the butter in the olive oil add the chicken and all the spices. Once the spices are absorbed and the chicken is done add all the sauces and heat through. Leave it slightly saucy. Enjoy I spread the buns with a mix of mayonnaise and sweet chilli or perinaise then added the chicken filling and chopped lettuce.
