INGREDIENTS
250g butter¾ cup icing sugar¼ cup glazed cherries chopped½ cup cranberries¾ cup almond nibsApprox 2½ cups self raising flour
METHOD
- Preheat oven to 175 degrees Celsius - Cream butter and sugar until light and fluffy - Add the glazed cherries, cranberries and almond mix until combined - Slowly add self raising flour 1 cup at a time mixing well until you have a nice soft dough- Divide the dough into 2 and roll into a log- Allow to chill in the fridge for 30 minutes- Slice, place on a baking tray and bake for 10 minutes- Remove from oven allow to cool completly, dust with icing sugar

A soft Buttery shortbread cookie with pieces of glazed cherries, cranberries and almond nibs then finished with a dusting of powdered sugar
