RECIPE
Marinade: for 1 chicken 1 onion2 birds eye red chillies (I used 2hot finger chilli, green)1/4c olive oil2 tablespoon vinegar1/4c lemon juice1 teaspoon paprika 1 teaspoon black pepper1 teaspoon white pepper1 tablespoon garlic (I used 2 cloves pressed)Salt to tasteHandful fresh coriander leaves*¹
Blend together to form a marinade, add to chicken and allow to rest for a couple hoursBake at 180 until done then pour sauce below over and grill for 15mins
Sauce1/2 Cup fresh cream*²2 tablespoon nandos peri peri sauce1/2 Cup calistos prego sauce2 tablespoon lemon juice2 tablespoon butter1 teaspoon dried parsleyBoil together then pour over chicken*³
*¹ added fresh coriander but this can be omitted *² used 1/2 Cup nestle dessert cream mixed with a bit of milk to thin out*³ boiled sauce in the microwave for 2mins, added chicken to a pan, poured sauce over and heated through before serving
