12 apples washed and dried, insert a skewer in eachKeep a dish of ice cold water readyIn a pot bring the following to boil3 cups sugar1 and a half cup waterQuarter teaspoon tartaric acidFood colour of choice

METHOD

Stir constantly, until the back of a spoon can get coated, or until the soft ball stage is reached, test by dropping a little in a cup of water, if you're able to roll into a ball with your fingers, it's readyDip apples in toffee then in cold water then in toffee and cold water again, for a even thick coatLeave to harden
