Heat water in a saucepan. Add butter or margarine and bring to boil until butter has melted completely. Take off heat and stir in flour and salt. Stir vigorously with a wooden spoon jmtil flour is fully incorporated and No dry lumps are visible. Cool down for at least 20 minutes. Add eggs to flour dough one at a time mixing well in between until all eggs are thoroughly mixed. Place mixture in a piping bag and pipe desired eclair shapes on a lightly greased baking sheet.
INFO & TIPS
Pick n Pay brand flour works best but alternative brands may be used. An electric beater is proffered but hand mixing the eggs in intervals does the job well too.
