RECIPE
500g chicken fillet or thighs, cubedSalt to taste1/2 teaspoon cracked black pepper1 teaspoon ginger & garlic paste (checkers)1/2 teaspoon bicarb1 teaspoon Chinese 5 spice (cape spices @checkers)2 tablespoon fresh orange juice3/4 teaspoon kashmiri chilliesMarinate the chicken in above and keep aside
Batter:5 tablespoon rice flour3 tablespoon cornflour3 tablespoon all purpose flourSalt and pepper to tasteGarlic and herb grind (@woolies)Water to make a batter ( not too thick or thin, should coat the chicken) Dip chicken in batter and fry until done - double fry for crispy chicken
Orange sauce:4 tablespoon dark soy sauce1/4c fresh orange juice 1 tablespoon kashmiri chillies3/4 teaspoon ginger powder1 tablespoon honey3 tablespoon vinegarAdjust seasoning to taste Mix together then add ti a pot, heat up and add in the fried chicken.Stor to coat and heat through then add slurry to thicken sauce
2 tablespoon cornflour mixed with water to make a slurry to thicken sauce
Serve with rice
