RECIPE
For the chicken strips:500g chicken, cut into strips1 teaspoon salt1 teaspoon fresh red chillie paste1/4 teaspoon turmeric1 teaspoon lemon pepper1 teaspoon crushed cumin3 tablespoon nandos peri peri sauce3 tablespoon mayonnaise2 tablespoon lemon juiceMarinate chicken with above for 3 to 4 hours
2 tablespoon olive oil (I used 1 tablespoon ghee (Clarified butter))2 teaspoon crushed garlic 1/4c tomato puree
1/2 Cup fresh creamHeat oil/ghee (Clarified butter) add garlic and Chicken and braise a bit then add in tomato puree and allow to cook unil chicken is tenderAdd in cream and stir well
For the tomato rice:1&1/2 Cup rice boiled2 tablespoon olive oil1 tablespoon crushed garlic2 tablespoon red pepper chopped2 tablespoon green pepper chopped4 large tomatoes liquidized1 tablespoon tomato puree1 teaspoon red chillies1/2 teaspoon lemon pepper1 teaspoon salt1 teaspoon crushed cumin1/4 teaspoon basil
Heat oil and add in garlic and peppers, braise for a couple minutes then add in remaining ingredients and cook u til you have a thick chutneyAdd in rice and allow to steam for 10 minutes until done
