METHOD
Steam potatoes as per package instructionsPlace into Pyrex and smash with the back of a glassSauté onion in butter until caramelized - spread over potatoesStir fry the mushrooms adding some veggie spice - spread over onions and potatoSprinkle cheeses then pour over creamTop with dried herbs - I used sweet basilBake at 200 until bubblingServe immediately
