Prawn linguine
1.) boil 1 pack (500g) linguine pasta until al Dante and keep aside
2.) marinate prawns in the following for at least 30mins1kg prawn (de-veined & de-shelled)2 teaspoon crushed green chillies2 teaspoon crushed red chillies2 teaspoon crushed garlic2 teaspoon red ginger and garlic masala1 teaspoon black pepper1 teaspoon white pepper1 teaspoon course red chilli powder2 teaspoon fine red chillie powder1/2 teaspoon turmeric powder1 teaspoon salt2 tablespoon lemon juice or juice of 1 lemon2 teaspoon Adega spice (omit if you don’t have)1 sachet tomato paste
3.)In a bowl mix together the following and set aside:1 Cup fresh cream2 tablespoon tomato sauce2 tablespoon mustard sauce2 tablespoon peri peri sauce (Nando’s)
4.)Heat 4 tablespoon butter in a pot. Add marinated prawns and cook until done - do not allow all the water to burn outAdd sauces from step 3 and cook well —> set aside
5.)Heat 1 tablespoon butter and 1 tablespoon flour - allow to braise then did 1 Cup milk and allow to thicken (white sauce)Add salt pepper and 1/2 Cup cheese Whisk well and add to prawns
6.)Add boiled pasta to prawns and allow to heat through - at this stage you could add a bit more milk if you feel it’s become too dry
