500-600g cleaned prawn meat 1 tin tomato puree 1 tin coconut cream 1 teaspoon salt 1 teaspoon cajun spice 2 teaspoon ground dhania (coriander) and jeeru (cumin) 1 teaspoon red chilli powder ½ teaspoon turmeric 1 teaspoon garam masala 1 tablespoon lemon juice 1 teaspoon sugar curry leaves mustard seeds 1 onion finely chopped butter 1 teaspoon ground garlic
Braise onions in a little oil with a sprinkle of mustard seeds; some curry leaves and ground garlic. Then add tin of tomato puree and spices; lemon juice; sugar. Let it cook a little then add in the coconut cream and mix well. Leave pot aside. In a pan add a blob of butter with a sprinkle of salt and half teaspoon ground garlic. Add prawns and cook till done. Add to curry and cook for few more minutes . Serve hot with rice or naan/roti. Enjoy!
