Ultimate Vanilla Sponge Cake

Adapted from various recipes.

INGREDIENTS

4 extra large eggs1 cup sugar
½ cup oil½ cup warm milk1 teaspoon vanilla essence
1 and ½ cups flour2 teaspoon baking powder

METHOD

Beat eggs and sugar until fluffy, about 5 minutes.Add oil, milk and vanilla. Beat well.Finally add the dry ingredients and mix lightly.Makes 1x 9inch cake or 18 cupcakes. Don't forget to line the pan with baking paper for easy release.
Bake on 180°c, well preheated oven till done.
Ice with buttercream or caramel. Delicious with fresh cream as well!

The cake in the image above was a 1.5x recipe to yield 3 thin layers.

Sandwich with Nestle Caramel treat and ice with stabilised fresh cream. Make a wreath on top of cake with rolos and pecans. Drizzle a little caramel as well. Enjoy!
