INGREDIENTS
4 eggs1 cup castor sugar½ cup oil½ teaspoon Peppermint essenceA few drops of green food colouring
½ cup warm water
1 and ¾ cups flour2 teaspoon baking powder
METHOD
Beat eggs, oil, sugar and essence on medium speed until fluffly and light.
Add water and beat.Finally add in your dry ingredients and mix lightly.
Divide evenly into cupcake trays, about 18-22 cupcakes.Bake in a well preheated oven @ 180°c until done.
Top with a little chocolate ganache and a swirl of our Ultimate Buttercream. Garnish generously with chopped Peppermint Aero.
