4 eggs1 cup castor sugar½ cup oil½ teaspoon Peppermint essenceA few drops of green food colouring ½ cup warm water 1 and ¾ cups flourHeaped ½ teaspoon bicarbonate of soda1 level teaspoon cream of tartar
Beat eggs, oil, sugar and essence on medium speed until fluffly and light. Add water and beat.Finally add in your dry ingredients (whisk them together in a seperate bowl first) and mix lightly. Divide evenly into cupcake trays, about 20-22 cupcakes.Bake in a well preheated oven @ 180°c until done (I have noticed that these take slightly longer than normal cupcakes, around 20 minutes in our oven) . Top with a little chocolate ganache and a swirl of our Ultimate Buttercream. Garnish generously with chopped Peppermint Aero.
