INGREDIENTS
1 chicken stock cube 4 tablespoon butter ½ onion 1 chicken fillet 1 punnet sliced mushrooms 2 teaspoon garlic paste SaltLemon juice 1 teaspoon chopped parsley 1 teaspoon black pepper Good pinch of saffron 1 cup Arborio rice Parmesan cheese grated Cheddar cheese grated Green and red chillies pounded 1 cup Chopped spring onion chives and parsley mixed
METHOD
Use arborio risotto rice (. Or any thick sticky rice )in a pan with hot water, add a chicken stock cube, and keep it on the boil all the time . In a separate pan put 4 tablespoon of butter , ½ an onion cubed , and braise till shiny, then add in 1 chicken fillet cubed 1 cup shelled peas and 1 punnet sliced mushrooms . Stir fry for 2 minutes. Now add in salt to taste , 2 teaspoon garlic paste , a squeeze of lemon juice and 1 teaspoon fresh chopped parsley . Stir in then add 1 teaspoon black pepper a good pinch of saffron and 1 cup rice . Stir fry on low and then keep adding a ladle of stock at once only . As u add the stock in keep stirring the rice . Do not stop . As the stock keeps drying out keep adding more until u see the rice is cooked through and soft . Kerp grating in Parmesan cheese too . (Should take 16 minutes but check your rice package to see how long it takes your rice to cook through ). Now add in green and red chilies finely diced . Stir in and check seasoning if needed . The rice should be wet and sticky . Add more Parmesan and a good helping of cheddar . Now add in a handful of chopped spring onion , chopped fresh chives and parsley . Stir in well and serve immediately ! I added a dollop of hot chilli sauce on each serving . Tips : key to a good risotto ; Arborio rice , stock, saffron threads , Parmesan and the stirring !
