INGREDIENTS
2 Potatoes (peeled and cubed)1 teaspoon salt1 teaspoon ground green chilli1 teaspoon Peri peri spice1 teaspoon chilli powder2TB finely chopped mint leaves1 TB lemon juice3 TB maizena (corn flour)
METHOD
Cook potatoes in water until soft.
Mash once cooked and add all spices.
Add maizena (corn flour) to form a uniform dough. (It should now bind together well)
Rest the potato dough for 30 minutes,then shape into tikis. Flatten slight to ensure even cooking.
Fry in medium hot oil until golden brown.
Serve with a yoghurt mint dip:
Plain yoghurtSalt and Black pepper to tasteChopped mintA squeeze of lemon juice
Mix all the above ingredients well and serve with the aloo tikis.
INFO & TIPS
I microwaved the potatoes ( with skin) for 2 minutes on each side until it was cooked.
Prick potatoes well with a fork if Microwaving.
I didn't have Peri peri spice so I used Portuguese spice.
