Wash & soak 1 leg with rough salt & vinegar in warm water 💧. Drain & make dashes on leg. Fill in gashes with garlic pieces and cloves.marinate leg in:1 tablespoon @purespice_sa ginger 🫚 garlic 1 tablespoon @purespice_sa red ♥️ masala 2 teaspoon Calcutta grill dust or 6 gun grill spice1 tablespoon mustard powder Few dashes of Worcestershire sauce 1 teaspoon arad (Turmeric)¼ cup vinegar 2 teaspoon @purespice_sa dhana jeeroo 1 tablespoon lemon 🍋 pepperSalt1 teaspoon saffron essence or toasted and ground saffron 1 tablespoon ground green chillies
Mix into a paste with little oil Marinate leg overnight Cook in oil or ghee (Clarified butter).(I cook my roast for about 3 hours. Flipping the meat every ½ hour)Wen done Pour in:¼ cup mayo¼ cup tomato sauce 2 tablespoon Worcestershire sauce ¼ cup mustard sauce Allow sauce & masala 2 thickenGarnish with chopped dhania (coriander) Slice & serve
