INGREDIENTS
260g light spelt flour 1 teaspoon baking powder1 teaspoon bicarbonate of soda3 very ripe bananas (450g approx weight with skin on)2.5 tablespoons coconut sugar85g butter, melted1 egg (room temperature)90ml milk (room temperature)85g chopped walnuts 60g dark choc chips
METHOD
In a large bowl add the flour, baking powder and bicarbonate of soda.
In a blender mix together the bananas, egg, sugar, milk and melted butter for about 30 seconds.
Add the wet ingredients to the dry and mix with a metal spoon until just combined. Last few strokes add in the choc chips and chopped walnuts.
Put in muffin cases and bake in a fan oven at 170C till light golden brown.

I’m trying to cut down on refined sugar.
These satisfy my sweet tooth and my children enjoy them as well.
I use a spelt flour called light spelt. You could probably mix white and wholemeal spelt flour together if you don’t have light spelt. Can also use normal plain flour as well.
