1 kg chicken fillet - cut into thick strips 1 teaspoon ginger 1 teaspoon garlic ¼ cup buttermilk 1 flat teaspoon black pepper ½ teaspoon lemon pepper ½ teaspoon parsley 1 tablespoon chicken spice / bbq 1 teaspoon Chinese salt Salt to taste
For the flour mix 1 ½ cups flour ½ teaspoon black pepper Salt 1 teaspoon Chinese salt 1 tablespoon bbq / chicken spice ¼ cup Hinds southern coating Mix
2 teaspoon Yeast2 tablespoon Sugar½ cup water ( I added alittle more )2 ½ cups flours½ teaspoon baking powder½ teaspoon bicarb2 teaspoon salt¼ cup avocado oil ( I used Veg oil )
6 tablespoon soya sauce 2 teaspoon honey 2 teaspoon brown sugar¼ teaspoon garlic ¼ teaspoon ginger ½ to 1 teaspoon crushed red chili flake1 to 2 tablespoon Chili oil / veg oil Little water
Red cabbage thin slices Red onion dhania (coriander) Spring onion
Marinade chicken for atleast 30 minutes
Mix the coating ingredients together in a ziplock bag Add the chicken strips and shake the packet to coat . Heat up oil , deep fry chicken until done - note u can shallow fry in coconut oil Remove from oil and set aside
Boa Buns :In a small Bowl , Combine the Yeast , sugar and water and stir , set aside for 5 minutes
In a large bowl Combine flour , baking powder , bicarb and saltAdd the oil and the yeast mixture and knead to make a soft dough if you using a machine knead for 5 Minutes.
oil a bowl and add the dough , cover and allow to rise .
Cut about 12 x 4inch parchment paper
Make balls with the dough and roll not too thin , place on paper square , brush the top with oil and fold over , cover and allow to rise again .
Add water to your bamboo or metal steamer , add the buns with the paper , close and allow to steam for about 8 to 10 minutes each.
Sauce : Add the oil and ginger garlic to a sauce pan , give it a quick simmer , add the sauces and water and allow to simmer , at this point you can adjust flavour , add more sugar , honey , chili or any other chili sauce etc . Remove from heat . Pour over the chicken and toss Or dunk each strip individually
Open boa bun Add the dunked chicken. Add the slaw Sprinkle some sesame seeds Enjoy

U can add sweet chilli sauce , sriracha as well
