Roti pastry:Mix 2gether ½ cup flour + 1 teaspoon cream of tar tar½ cup maizena (corn flour) +1 teaspoon cream of tar tarSet aside.
4 cups flour siftedMix in a jug:2 teaspoon vinegar 1 egg yolk1½ cups ice cold water or soda water (iced)
Grate 500g butter.I use 300g butter and 200g rama. Divide into 5 portions. Rub 1 portion butter into flour. Make a dough with water mixture. Rest 15 minutes.Divide dough into 5 balls.
Roll out rotis not too thin.Sprinkle maizena (corn flour). put 1 portion of butter. Sprinkle maizena (corn flour)
Close with another roti.
Repeat till u have a stack.Roll out big. Fold.Rest for about ½ hour.Roll out fold and freeze.
Thaw out overnight in fridge.Roll out 🧈shape 🧈fill (brush beaten egg and sprinkle herbs or poppy seeds or color sesame seeds)Freeze till needed(Aunty rashida tootla)
