INGREDIENTS
Curry250g sugar beans, soaked overnight
1.5 -2 litres cold water1 teaspoon rough salt¼ teaspoon bicarbonate of soda
Braise-½ cup oil1 dishing spoon ghee (Clarified butter)Few curry leavesFew bay leaves2-3 green chillies, stemmed and slit2 big cloves of garlic, whole1 teaspoon jeera seeds1 teaspoon mustard seeds1 big onion or 2 medium, sliced fine
3 medium tomatoes, cubed2 tablespoons tomato saucePinch of sugar1 level teaspoon salt2 heaped teaspoons chilli powder1 heaped teaspoon dhana jeera powder1 teaspoon arad (Turmeric)1 tablespoon Methi (Fenugreek) masala (Atchaar masala)Sprinkle of gharam masala
Katchumar1 big onion, cubed small½ cup white vinegar ½ teaspoon salt or little more, to taste½ teaspoon sugar½ teaspoon mixed herbs½ teaspoon finely ground black pepper 1 big tomato, cubed small 2 medium carrots, gratedSmall piece of cucumber, cubed small Fresh dhania (coriander) or spring onion, chopped fine
Family-batch Brownish roti1 cup brown flour1 heaped teaspoon salt1 teaspoon sugar½ cup oil2 cups hot water, straight from the kettle 3 cups cake flourghee (Clarified butter), for brushing
METHOD
CurrySoak beans overnight. Drain out water and rinse well. Add to a large pot with the water, bicarb and salt and bring to a boil. Boil until tender but not mushy. Water should have decreased significantly. Remove from the heat and set aside. Do not drain! Bean broth is gold and will add tonnes of flavour to your curry🔥.
Braise onions and whole spices in oil/ghee (Clarified butter), on medium heat, until well softened and golden. You can add a pinch of bicarb to speed up the process.
Now add in your tomatoes and dry spices and cook until water burns out and the tomatoes are completely smashed. Add a splash of water if necessary.
Add your beans with the broth to the curry and allow to simmer on very low for an hour or two. Taste and adjust salt if needed. You can add a little water to thin out if need be.
Note: If you will NOT be serving with the katchumar, add a teaspoon of vinegar/lemon juice now. Otherwise, leave it out. (Sugar beans need a kick of acid. You can also try some aamli-juice if adventurous!)
KatchumarMix together ingredients in the order listed and refrigerate for at least an hour before serving. Stir very well to evenly distribute vinegar and spices.Katchumar is not really finicky- adjust the ratio of veggies to suit your taste. And if something is not on hand, simply leave it out.
RotiPlace brown flour, sugar, salt and oil in a large bowl. Add boiling water and mix well.Add in the cake flour and knead well.Divide into 20-24 balls and toast on hot tawa. Brush lightly with ghee (Clarified butter). (For more information, check our Ultimate Roti post.) Keep well covered until serving.
INFO & TIPS
This makes for an easy and satisfying meat-free weeknight meal.
Otherwise, serve with grilled kebabs/chops or masala chicken and it suddenly becomes company-worthy 🙌
