INGREDIENTS
350g coleslaw mix3 spring onions (chopped)1 tablespoon soy sauce2 tablespoon avocado oil500g fillet1 teaspoon salt½ teaspoon pepper1 tablespoon garlic paste1 teaspoon ground green chilli230g Lancewood plain cream cheese (softened)3-4 tablespoon Sriracha chilli sauceSpringroll pastryBeaten eggCornflake/breadcrumbsSweet chili sauce (to serve)
METHOD
1. Toss coleslaw mix, spring onions, soy sauce and avo oil.2. In a pan, heat a drizzle of oil. Add in garlic, green chilli, salt and pepper.3. Add in chicken. Cook until done and then shred.4. In a large bowl, mix cream cheese and Sriracha sauce. 5. Then mix in chicken and coleslaw mixture. 6. With a corner of a spring roll wrapper facing you, place about 2 tablespoon filling just below center of wrapper. Cover remaining wrappers with a damp paper towel until ready to use.7. Fold bottom corner over filling; fold side corners toward center over filling; roll up tightly.8. Spread some water flour paste to the last corner of pastry and seal closed.9.
