INGREDIENTS
• +-3.5 kg Chicken Mince
• 5-6 onions finely chopped in food processor ( don't over process )• 3 Big tablespoon ghee (Clarified butter)• 2 teaspoon Whole Jeeru (Cumin)
- Use a large flat pot
- Braise Jeeru (Cumin) in ghee (Clarified butter) - Add onions in & braise until light pink- Add 3-4 tablespoon green chillies & garlic masala or according to taste & 2 teaspoon ginger garlic & cook for awhile- Add in mince- Add few big pieces taj
METHOD
- Braise mince well... Mash with the back of spoon - To braised mince add a teaspoon each of salt , white pepper , dhana Jeeru (Cumin) , arad (Turmeric) . Braise well until no water remains.- Mash well with a potato masher to seperate mince
- To cooled mince add 6 onions chopped fine & squeezed dry in a muslin cloth- Also add in 5-6 bunches dhania (coriander) chopped fine
