INGREDIENTS
β’ 1 onion - chopped fineβ’ 1 big tablespoon each of Oil & ghee (Clarified butter)β’ 1 teaspoon salt or to tasteβ’ 1 teaspoon red powder chilliesβ’ 1 teaspoon dhana Jeeru (Cumin)β’ Β½ teaspoon arad (Turmeric)β’ 2-3 tomatoes processedβ’ 3 potatoes - boiled in jackets until softβ’ 6 eggs - hard boiledβ’ Fresh dhania (coriander)
METHOD
- Braise the finely chopped onion in abt a tablespoon each of ghee (Clarified butter) & oil until light gold. Add in your spices & braise. - Then add in your liquidized tomatoes. Add abt ΒΌ cup of water & simmer till you have a nice chutney.- Take 1 boiled potatoe - peel & grate into the chutney. Mix. Peel the other 2 potatoes as well...slice into rounds and add to your pot.- Then shell your eggs carefully slice halfway through & leave the yellow whole. - Slice the whites & add to the curry.- Add abt ΒΌ cup water & allow everything to simmer together .- Chop fresh dhania (coriander) over the curry & serve hot with rotis or soft bread .
