INGREDIENTS
4 medium potatoes, peeled1 small onion, finely chopped½ cup flour2 Tablespoons semolina2 eggs1 full teaspoon salt 1 teaspoon fine crushed black pepper
oil for frying
METHOD
Grate potatoes on the fine side of a box grater. Now squeeze slightly to remove and discard any excess water. Add in the rest of the ingredients. Mix well.
Heat a pan up and add in enough oil to cover the bottom. Allow the oil to heat up well on medium.Spoon in some of the batter. You can make the hash browns as large or small as you like.Press down so that they are flattened slightly- about 2cm thickness
Allow to cook for about 5 minutes until well golden brown.Flip over and cook the other side. They should be very very crisp, do not undercook.Remove to a tray lined with newspaper and Carlton paper. Blot excess oil.
Serve immediately with eggs and tomato sauce, or in a burger.Delicious!
