INGREDIENTS
125g butter125g oil1 teaspoon cinnamon 1 grating of fresh nutmeg ½ cup brown sugar, pulsed lightly in grinder
4 tablespoons toasted Klim⅓ cup semolina 2 and ¾ cups flour
½ cup castor sugar for rolling
METHOD
Beat the butter, oil, spices and brown sugar until white.
Add in the dry ingredients that have been sifted together. Bind into a soft dough(add a teaspoon of flour if needed, should not be sticky).
~You may add in cranberries or lightly toasted almonds at this point.
Roll into small 20g balls then roll in castor sugar.Place, a few centimetres apart, onto a greased baking tray.Flatten slightly with a fork.
Now bake in a well-preheated oven on 160°c for about 18 minutes until golden brown. Check early as your oven is different to mine.
Cool before packing and storing in an airtight Tupperware.
