RECIPE
BEAT TOGETHER½ cup sugar2 EggsI ADDED VANILLA ESSENCE Beat well NOW Add 2 tablespoon Melted or Well beaten Apricot Jam to make it smooth
In a separate Dish Add1 & ½ cup flour (I did not use self raising flour)1 teaspoon baking powderPinch if salt
Sift the above all together Now for the liquid to make a nice Batter
In a separate dish Mix 2 tablespoon Melted butter Or 1 Dessertspoon 1 teaspoon vinegar+- ½ cup milk1 level teaspoon bicarbVANILLA ESSENCE
Mix all together
Bake at 180* in a covered dish for 30-35 minutes
TO PREPARE THE SAUCEUSE 1 cup Tub fresh Cream ORIdeal Evaporated Milk4 & ½ tablespoon BUTTER½ cup sugar1 cup boiling water1 teaspoon Vanilla essenceBRING ALL OF THE ABOVE SAUCE INGREDIENTS TO BOIL
POKE THE PUDDING (CAKE)THEN Pour SAUCE over pudding as soon as it's bakedSERVE WARMWith Hot custardOr Cold with IcecreamENJOY

For oven size tray make 4x (four times) this recipe
I used a deep wide glass rectangular loaf casserole
