Dubai-Style Paratha Burger

Paratha Dough
4 cups flour
2 cups tap water
1. Make a smooth dough and set aside to rest.
2. Roll out the dough into a large circle.
3. Drizzle a little oil over the surface and sprinkle lightly with flour.
4. Roll into a Swiss-roll shape, then coil it into a spiral.
5. Roll out into bun-sized rounds.
6. Toast on a tawa or frying pan until golden.
7. Slice open and toast the inside for extra crispiness.

Patties
500 g beef/mutton mince
Salt to taste
2 teaspoon Mexican spice (I used a homemade mix)
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1. Mix all ingredients well.
2. Divide into 6 balls and flatten between two sheets of plastic.
3. Grill until cooked through.
4. Top with grated or sliced cheese; allow to melt.

Sauce
Mayonnaise
Tomato sauce
Peri-peri sauce
Finely chopped onion
Chopped pickled jalapeños
Mix all sauce ingredients together in a bowl.

Assembly
1. Spread sauce over the inside of the toasted paratha.
2. Place lettuce on one half.
3. Add a cheesy patty.
4. Spoon over more sauce if desired.
5. Close with the other paratha half and serve hot.
