INGREDIENTS
2 chicken breasts, minced1 onion, finely chopped¼ cup chives, choppedSalt to taste1 teaspoon white pepper powder½ teaspoon black pepper powder1 tablespoon soy sauce
For the dumpling wrappers:1 cup cake Flour ½ teaspoon salt¼ cup hot water (may need more water)
For the chilli oil: (my own version)
Sunflower oilSoy sauceBrown vinegar.Brown sugarChilli flakes
METHOD
Method: In a bowl, mix minced chicken, onions, chives, salt, white pepper and soy sauce. Set aside.
For the wrappers, mix together the cake flour, salt and hot water. Knead for 5-8 minutes and then let the dough rest for 20-30 minutes. Divide the dough into small pieces and then roll each piece into a small circle.
Place some filling in the middle, wet the edges with water and press the wrapper together for a good seal. Fry the dumplings on a pan for 2 minutes on one side and then once it has some color, add water to the pan and cover with a lid immediately to steam the dumplings- for 10 minutes.
For the chilli oil,I heated the sunflower oil for a minute until hot. Then I added the other ingredients to taste. Stir well and heat for another 30 seconds. Garnish with chopped green onions and pour over the dumplings,enjoy!
