INGREDIENTS
1 cup brown bread flour 1 cup cake flour 1 teaspoon sugar¼ teaspoon salt2 level teaspoons baking powder
2 teaspoons ghee (Clarified butter)
¼ cup milk½ cup waterDrop of white vinegar
METHOD
Sift the dry ingredients into a large bowl.
Rub in the ghee (Clarified butter) with your fingertips until the mixture resembles breadcrumbs.
Mix the liquid ingredients together in a mug, then pour into the dry mixture. If it's far too crumbly and dry, add just a tablespoon of water.
Bind into a firm, elastic dough. Cover tightly and rest for 30 minutes.
Divide the dough into two balls. Roll each into a large circle (about the size of a dinner plate).
Cut each circle into 8–12 even triangles, giving a total of 16–24 puris.
Fry a few at a time in hot oil until fully puffed. Remove with a slotted spoon onto Carlton paper, draining well and dabbing both sides.
Transfer to a tupperware lined with greaseproof paper. Cover tightly and allow to steam for a few minutes.
Serve warm with curries, kebabs, chicken, or patha.
