INGREDIENTS
200g white sugar-granulated (1 cup)
100ml water (½ cup)
200ml heavy cream (heated)
70g butter
1 teaspoon vanilla extract
½ teaspoon fine sea salt (do not add if you used salted butter)
METHOD
Prepare all the ingredients in advance to make this an easier process.
In a saucepan add the sugar and the water, before placing it on the stove stir it well so the sugar dissolves in the water.
Place it on the stove on medium heat, and DO NOT STIR, make sure you also grab a silicone brush, wet it with water and brush the edges of the saucepan so that the sugar does not crystallize, repeat this process everytime you see the bubbles reaching the edges of the saucepan.
Once the sugar has reached a golden/amber colour, turn off the heat and slowly add in the heavy cream and whisk continously. Most importantly remember to heat up your heavy cream because if it is cold it will make the sugar seize up and crystallize.
Stir continuously until all the heavy cream has been added in, you will see it bubble up but don't worry just keep on stirring. Once the heavy cream has been added, add in the cubes of butter and stir on low heat until all the butter has been dissolved.
Take it off the heat, put in a splash of vanilla and let it cool down before serving and it's done!!!
You can serve this as a topping for deserts, fillings and ice cream, really delicious and super easy.
