INGREDIENTS
4 long brinjals, sliced
For the marinade:
Salt to taste
1β2 teaspoon red chilli powder
Β½ teaspoon turmeric
Little oil
For the yoghurt mix:
1 cup yoghurt (or inkomazi)
Salt to taste
Β½ teaspoon red chilli powder
ΒΌ teaspoon turmeric
1 teaspoon coriander powder
For the tempering (vagaar/tadka):
Oil
ΒΎ teaspoon cumin seeds
Curry leaves π
Chopped green chillies
2 dried red chillies
METHOD
1. Mix marinade ingredients to make a paste. Rub over brinjal slices.
2. Heat a little oil and grill brinjals on both sides until soft and slightly golden.
3. In a bowl, whisk yoghurt with spices. Pour over the grilled brinjals and simmer gently until cooked and flavours blend.
4. In a small pan, heat oil and add cumin seeds, curry leaves, green chillies, and dried red chillies. Let them splutter.
5. Pour this hot tadka over the brinjal mixture.
6. Garnish with fresh coriander and serve warm with roti or as a side to rice dishes.
