Pavlova:4 egg whites (set yolks aside)Beat with ΒΌ teaspoon cream of tartar until stiff.
Gradually add:1 cup castor sugarMix until thick, then fold in:1 tablespoon cornflour1 teaspoon vinegar
Pipe onto a lined tray and bake at 120Β°C (thermofan) for 1 β 1Β½ hours until crisp outside and soft inside.
Top with whipped cream and fresh or tinned fruit β I used blueberries and peaches. ππ«

Donβt waste the yolks! π Make Lemon Curd:Mix:
4 egg yolks
Β½ cup sugar
ΒΌ cup lemon juice
Cook over low stirring until thickened.Add 2 tablespoon butter and mix in.
Cool and store β it freezes beautifully! βοΈ
