INGREDIENTS
To make 4 schnitzels:2 chicken breasts1 egg2 tosp milk1 cup plain/AP flour1 cup panko breadcrumbsSeasoning: salt, pepper, chicken or veg bouillon powder, mixed herbs, garlic powder and grated pecorino or Parmesan)
METHOD
1. Cut the chicken across lengthways to create two thin steaks out of one piece. I find you don't need to bash this way.2. Grab 3 bowls. Crack and whisk the egg in one with the milk, add the flour to the second and the breadcrumbs and all seasoning to the third.3. Place the chicken in the flour first, then egg, then breadcrumbs. Make sure to press down firm and coat really well.4. Shallow fry on medium heat. I use olive oil. Once the chicken is golden brown on one side should take about 3-4mins, turn over, lower the heat to the lowest and cover. Continue to cook under golden brown a further 3-4 minutes.5. To help keep it warm and help the coating stay place, place in an oven at 100c until ready to eat!
