RECIPE
There’s nothing quite like homemade butter chicken — silky sauce, tender chicken, and all the right spices 🌶️🧈
🍛 Butter Chicken

MarinadeIn a bowl, mix together:
⅔ cup yoghurt
1 tablespoon lemon juice
1 tablespoon grated fresh ginger
3 cloves garlic, grated
2 teaspoon garam masala
1 teaspoon turmeric
1 teaspoon coriander powder
1 teaspoon salt
2 teaspoon chilli powder (or more if you like it spicy)
½ teaspoon cumin powder
Add:
500g chicken fillet, cubed
Mix to coat well and let it marinate.Pan-fry until golden — or air fry for 15 minutes like I did.

Sauce
2 tablespoon oil
4 tablespoon butter
1 large onion, finely chopped
Sauté onion until soft. Then add:
2 teaspoon ginger
2 cloves garlic
1 teaspoon garam masala
1 teaspoon dried fenugreek leaves
Stir in:
2 cups pureed tomatoes
¼ teaspoon orange powder food colouring
¼ teaspoon red powder food colouring
⅔ cup water
⅓ cup cashews (or use cashew paste)
¾ cup cream
1½ teaspoon sugar
salt to taste
Blend to a smooth paste, return to the pot, and add 60g butter and the cooked chicken Simmer until thickened and fragrant.
Finish with a sprinkle of Aromat (a South African Spice) (optional) and fresh coriander. 🌿Serve hot with naan or basmati rice.
I double this recipe so the next day I use it to create another dish.... usually butter chicken pasta... 🍝😋
