INGREDIENTS
grilled or rotisserie chicken deboned and sliced1 onion peeled and halved1 ginger halved lengthway1 cinnamon stick2 star anise 3 cloves1 teaspoon fennel seeds 1 teaspoon dhania (coriander) seeds1 teaspoon jeera seeds1 teaspoon whole peppercorn 1 tablespoon brown sugar 1 teaspoon white or apple cider vinegar ½ teaspoon msg 400g woktime or Roka pad Thai plain noodles (checkers)Spring onion Fresh dhania (coriander)Thinly sliced pickle onion
METHOD
In a large sauce pot, toast onion, ginger, whole spices until fragrant Then add bones, sugar, msg, vinegar, 2ltr water. Bring to gentle boil and let simmer for 30-60mins.Skim the foam and adjust seasoning to tasteStrain broth and discard bones and spices.Cook noodles as per packet method Place noodles in bowl. Ladle in broth Add sliced chicken Garnish with fresh dhania (coriander), spring onion, sliced pickle onion, chilli crisp oil, lemon slice, boiled egg.Mix and enjoy the delicious broth

                      Store bought chicken makes this quick and easy.
Or oven grill a marinated butterfly chicken from your preferred butcher.
If broth is too strong, add boiling water.
If too weak, add half knorrox stock powder dissolved in hot water
