INGREDIENTS
4 chicken thighs skin on 1 tablespoon soy sauce 1 tablespoon oyster sauce 1 tablespoon Worcestershire sauce 1 tablespoon tomato sauce 1 tablespoon Fleures hot honey sauce (SANHA approved)1 tablespoon brown sugar 1 tablespoon white vinegar 1 tablespoon ginger garlic paste1 tablespoon sesame oil1 teaspoon Aminas Chinese 5 spice1 teaspoon msg1 teaspoon white pepper1 teaspoon paprika 1 teaspoon red chilli powder Salt to taste
METHOD
Debone thighs and soak in water, salt, vinegar for 15 minutes then rinse.Marinate chicken in sauces and spices for 2hours to overnightPlace in air fryer liner and cook until done.180deg for 15-20 minutes.Saute leftover marinade with little extra honey until sauce thickensUse as extra dipping sauce Serve with plain rice or egg fried riceGarnish with spring onion and sesame seeds
Plain rice - Gordon Ramsay method 300g washed basmati 300ml cold water1 cinnamon stick 2 star anise 3 cloves 3 green Elachi (cardomom)Salt to taste
Place above ingredients into pot.Bring to a boil.Then place lid on and reduce heat to medium low.Simmer for 12-15min with lid on.Turn off heat and steam for 10 minutes.Open lid and remove whole spices Fluff with fork
Basic egg fried rice 2-3 cups cooked rice (must be cold)3 eggs beaten and seasoned to taste1 spring onion, chopped1 tablespoon soy sauce
Scramble eggsAdd in cooked riceAdd in soy sauceMix well then top with spring onion
INFO & TIPS
If you can't get 5 spice.
Toast cinnamon stick, star anise, fennel seeds, clove, Sichuan peppercorn in pan, then grind to fine powder.
If you can't get hot honey sauce, add 1tbls more chilli powder and extra Tbls vinegar
