CHEESE SCONES

Ingredients
1 cup flour
30g grated butter
½ teaspoon salt
1 tablespoon baking powder
2 cups grated cheddar cheese
1 egg
½ cup milk
Extra grated cheese (for topping)
Optional: chopped jalapeños and/or spring onions
Method
1. In a bowl, add flour, butter, and salt.Rub with your fingertips until the mixture looks like breadcrumbs.
2. Add baking powder and grated cheddar cheese.Mix lightly to combine.
3. In a separate jug, whisk together the egg and milk.Keep aside around 2 tablespoons for brushing.
4. Pour the remaining egg–milk mixture into the dry ingredients.Mix gently until just combined — don’t overmix.
5. Divide the dough into 8 portions.Roll into balls and flatten slightly.
6. Brush each scone with the reserved egg–milk mixture.Sprinkle generously with grated cheese.
7. Bake at 180deg °C until golden.I baked mine at 160°C thermofan for 13 minutes.
8. Add jalapeños or spring onions if you want extra flavour
