Cabbage-Shaped Dumplings 🥟💚🥬

Dough
3 cups flour
½ teaspoon salt
1½ cups boiling water
Green gel colouring (dark + light)
Make a soft dough using boiling water.Divide it and colour about ¼ of the dough with light and dark green gel colours.

Filling
Mix together:
500g beef or chicken mince
1 chopped onion
1 tablespoon ground green chillies
Salt & pepper to taste
2 tablespoon soy sauce
1 tablespoon garlic

To Assemble
1. Roll out the green dough into a long rectangular sheet.
2. Roll the white dough into a log to fit the centre of the green sheet.
3. Place the log in the middle, roll it up, and pinch to seal.
4. Roll the combined dough to elongate it and slice into pieces.
5. Roll each slice into a round.
6. Add filling in the centre and fold into a half-moon.
7. Pinch both ends towards the centre.
8. Using your thumbs, slide up the edges and pinch to create “cabbage leaf” ridges.

To Cook
Heat a little oil in a pan.Place dumplings in and allow the bottoms to crisp.Add water to the pan, cover with a lid (slightly open), and steam until cooked.
Serve with chilli oil.Makes ±33 dumplings.
