INGREDIENTS
- 250g mascarpone cheese- 200ml whipping cream (or heavy cream)- 80g icing sugar- 1 teaspoon vanilla extract- 20 ladyfingers- ¾ cup brewed coffee- 1 tablespoon cocoa powder
METHOD
1. In a large bowl, beat the mascarpone cheese until light and fluffy.2. Add the icing sugar and vanilla extract, and beat until well combined.3. Gradually add the whipping cream and beat until stiff peaks form. Set aside.4. Dip ladyfingers briefly in the brewed coffee and layer them in a tray.5. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of coffee-dipped ladyfingers and the remaining mascarpone mixture.6. Smooth the top of the mascarpone layer and dust with cocoa powder.7. Refrigerate for at least 2 hours before serving
