Lemon & Tutti Frutti Tea Cake

Ingredients
• 1½ cups sugar• 1 tablespoon lemon zest• 125 g butter or margarine (softened)• ¼ cup oil• 3 eggs• 1 teaspoon vanilla essence• ¼ cup freshly squeezed lemon juice• 2½ cups flour• 2 teaspoon baking powder• ¾ cup milk• ⅔ cup tutti frutti
Method
In a bowl, rub the sugar and lemon zest together until fragrant.
Add the butter or margarine and beat until light and fluffy.
Mix in the oil, eggs and vanilla essence until well combined.
Add the lemon juice, flour, baking powder and milk. Mix until smooth.
Gently fold in the tutti frutti.
Pour the batter into a greased and lined loaf tin.
Bake in a 160°C thermofan oven for 50–60 minutes, or until a skewer inserted comes out clean.
Turn out onto a wire rack and allow to cool completely.
Dust with icing sugar before serving.
