Ingredients & Method
• 1 packet tamarind (amli (tamerine))Soak in 1½ cups boiling water and set aside for 30 minutes.
Strain well and discard seeds.
Pour the tamarind water into a large bowl and add:
• ¼ cup red chilli powder(I used Suhana X-Hot. If using mild chilli powder, use ½ cup)• 1 cup vinegar• ½ cup sugar• 4 tablespoon Methi (Fenugreek) masala• 2 cups tomato sauceMix until well combined.
Tempering
Heat 4 tablespoon oil in a pan.
Add:• 2 tablespoon mustard seeds• 1 tablespoon sesame seeds• 1 sprig curry leaves
Once fragrant, pour over the chutney, mix well, bottle and refrigerate.
